Fall..

It is almost hard to believe that fall is almost here when it is still 98 degrees here in my big Texas town . But none the less i have still been turning my a/c down to colder temps and pretending its cold outside. Just a few things that help me remember that it truly is fall are these few things....

Pumpkin spice lattes at Starbucks are something i love dearly and I've waited all year for them.

As you know i love to bake and since most everything I'm writing about today is food lol

Pumpkin Bread and Carmel ice cream would have to be a must :)

Last but not least we cant forget Halloween!!

What reminds you all of Fall???

Sweet Cinnamon Rolls

As many of you have figured out i love to bake but i have been on a mission to find the best cinnamon roll recipe that was fluffy yet sweet but not too sweet and i think i have finally found one. I hope you all enjoy baking them as much as i did.

For the Dough:

1 Cup of Milk
1 Tablespoon plus 1 teaspoon active dry yeast
1/4 Cup of Sugar
1 Teaspoon of Salt
1/2 Cup of Butter melted
3 1/4 Cup of Flour, sifted

For The Sweet Cinnamon Filling:

1/2 Cup of Slightly Softened Butter
1 1/4 Cups of Light Brown Sugar
2 Tablespoons of Granulated Sugar
2 Tablespoons of Ground cinnamon

For The Frosting:

6 Ounces of Cream Cheese
1 1/2 Cup of Confectioners Sugar
3 Tablespoons of Milk
1 Teaspoon of Vanilla

To make the dough, pour your milk into a saucepan over medium heat for 3 minutes, or until lukewarm. Transfer the milk to the bowl of an electric mixer fitted with a paddle attachment. Add the yeast and a pinch of sugar and let sit for 5 minutes, until the yeast is dissolve. Add the remaining sugar, and salt, and the melted butter stir in the flour. Then turn your mixer on low until the dough forms. Then put your dough into a slightly oiled bowl and cover to rise for about 1 hour. Next you can start making the filling , place the butter, brown sugar, granulated sugar, and cinnamon in a small bowl then stir until smooth. To make the frosting put the cream cheese in a bowl make sure it has had time to soften a bit and mix with a mixer until creamy then all the confectioners sugar, milk, and vanilla mix until smooth.
Preheat your oven to 350'F and lightly butter a cookie sheet.
Roll out your dough on a floured surface until its about 1/4 inch thick then spread your filling over the dough and roll the dough up like a log. Now cut the dough into 12 pieces about 1 1/2 inches wide and transfer each one onto your cookie sheet then let the cinnamon rolls rise for about 20 Min's and bake for 15 Min's. Spread the icing on top eat and enjoy :)
